Richard’s cooking ability is of a very high standard, he has a great mix of varied cooking skills and abilities, which made him an all-round great chef, Richard was very hands on, kept a very lean and tight food budget. He was great at cost control across all areas of the kitchen. The staff really looked up to Richard and admired his hard work ethic and great attitude toward all the staff.
Richard was very engaging with staff and was very good at motivating them when it was required, even with one to one chats he always made the time.
In working with Richard over these many years he has always been very consistent and hard working in all my kitchens, he has a great mental attitude in every task that he has been given, combined with his skill and knowledge of cooking, he is a great all round chef. He will be thoroughly missed in my kitchen.
